On Tuesday, March 26th, Wayne County CEO students visited the Yellow Rose Smokehouse in Wayne City, Illinois. Owner/Operator Tom Stewart, originally from Texas has immense experience in the restaurant operation and management industry. Tom spent time giving a tour of the restaurant and talking to students about establishing menu options in consideration of costs of good sold as well as overhead costs. Tom also shared the importance of the French phrase "mis en place", meaning everything in its place. It's how food is prepared, how inventory is ordered, how supplies are organized and serves as the "culture" for his restaurant operation. Board member Marcie Caldwell arranged the visit for the group and was able to attend as well. Thank you to both Tom and Marcie for their time and support of the Wayne County CEO program.
